Unagi Tama-don



I looooove unagi!! But this unagi tama-don can be made with any protein of your choice. I've seen it made with salmon, chicken, even scallops. It's a particular favourite dish of mine to order at japanese restaurants but every time I do, I can't help but gripe at the tiny amount of unagi given and I also can't help thinking how easy this is to make at home! So I finally did! 

This dish takes a few specialty ingredients to make that are all slightly difficult to find other than larger supermarkets like Fairprice Xtra or a japanese supermarket like Don Don Donki so if you're planning to make this, make sure you have enough ingredients!

It's also a SUPER quick and easy dish, I'm talking like 15 minutes!! 

Ingredients:

- 2 large onions (or less if you don't like onions but I love onions!) 
- 4 eggs 
- 1/2 tbsp bonito powder
- 2 tbsp water
- 2 tbsp milk 
- 2 tbsp light soy sauce 
- 2 tbsp mirin 
- 1/2 tsp rice vinegar
- 1/2 tbsp sugar
- pinch of salt 
- pinch of white pepper
- cooked protein of choice (I used frozen unagi that I baked and sliced up!) 

Steps:

1. Slice onions thinly and crack 4 eggs into a large bowl and whisk. 

2. Mix in a small bowl: bonito powder, water, 1tbsp soy sauce, 1 tbsp mirin, rice vinegar, salt, sugar and pepper. Mix to combine thoroughly. 

3. Heat oil in a frying pan and fry onions on low-medium heat until soft and slightly caramelized.

4. Add mixture from step 2 and continue to stir and cook onions until super soft.

5. Remove onions from pan and set aside. Beat the eggs with 2 tbsp milk, 1 tbsp mirin, 1 tbsp soy sauce. 

6. Clean pan with a paper towel and add 1 tbsp oil to pan, swirl to coat and ensure that pan is well coated with oil. Add the onions back in and add the egg mixture. 

7. Cover the pan and cook over low-medium heat for 5 minutes. Add the protein on top of the dish and continue to cook until eggs are done to your liking. 

8. Serve on top of japanese rice and garnish with spring onions!
